In the past few months the Quality Assurance Team has been
working with the Food Service Department in providing
coffee knowledge and cupping training to various schools,
such as the Art Institute of Orange County - Culinary Arts
School and the Glendale Community College - Culinary Arts
Program.
During these trainings we perform many labs to educate
students on basic flavors that are sensed on the tongue,
aromas that are found in coffee and how to differentiate the
two types of coffee beans (Arabica and Robusta), as well
as a decaffeinated sample. We also provide a step by step
cupping session and have several brewed origin coffees
(Kenya AA, Sumatra, Colombia, etc.) to demonstrate the
variety of tastes in coffee.
The students have mentioned that they were not aware of the
wide range of information and process that goes behind a
cup of coffee. They have found the training informative and
it has broadened their perspective and knowledge of coffee.
We are proud to say that the students acquired a greater
notion of coffee and have conveyed a definite interest in
serving a better cup of coffee in their restaurants.
